How to preapre a Tradicional Style Yerba mate gourd

Yerba Montana tradicional loose leaf yerba mate
Filtered Water
1 your favorite yerba mate gourd or small cup
1 Bombilla (filtered straw for dinking yerba mate)

Instructions

Fill about two-thirds of the gourd with dry yerba mate leaves. You can use your hand to cover the top of the gourd, shake it lightly to sift the smaller leaves to the bottom, making it less likely for the bombilla to get clogged.
Tilt the gourd at an angle so that the yerba accumulates on one side, leaving an empty space on the other side. This "slope" helps in managing the water flow.
Pour a small amount of cool or room-temperature water into the empty side of the gourd. This initial hydration "wakes up" the yerba without burning it. Let it sit for about a minute or until the water is absorbed.
Once the yerba has absorbed the initial water, insert the bombilla into the empty side of the gourd. Push it down gently so that the filter end is buried in the yerba but not touching the bottom of the gourd. This helps in filtering out the leaves while drinking.
Heat water to about 160-170°F (70-75°C). Water that's too hot can scorch the yerba, making it bitter. Pour the hot water into the gourd on the side where there's no yerba, slowly filling it up to just below the top of the yerba mound.
Let it steep for a moment, then sip through the bombilla. This first sip is often the strongest. Drink it all the way down to the level of the yerba.
Keep refilling with hot water as needed. Each refill will be less strong than the last. The mate can be refilled several times before needing to start over with fresh yerba.
After use, empty the gourd. For a traditional mate gourd, you might just shake out the wet yerba and leave it to dry. For ceramic or other materials, you might prefer to wash it out. Avoid using soap if you want to keep the traditional flavor.

Notes

Proper water temperture is exteremely important when preparing a gourd of yerba mate. Boiling water will make the yerba too bitter and will also make it too hot to drink.
